Chocolate Cake in the Oven in 10 mins!
This has got to be one of the easiest chocolate sponge cakes I've ever come across :)
It's super quick to prepare, light, tasty, is made from ingredients that most of us are likely to have in the cupboard already and very versatile, what more could a mum ask for?

Ingredients
225g Plain Flour
200g Castor Sugar
50g Cocoa
1 tsp Bicarbonate of Soda
1 tsp Salt
1 tsp Vanilla Essence
1 tsp Vinegar
5 tbs Olive Oil
7 1/2 fl oz water
Method
- Sift the floor, sugar and cocoa into a large bowl
- Make three holes in the top of these ingredients
- In the first put the vinegar and vanilla
- In the second put the bicarb and salt
- In the third put the oil
- Then pour the water over everything
- Stir very thoroughly
- Put the oven on to 180 C/ 350 F/ GM 4
- Pour the mix into an ungreased 8" baking tin
- Cook for 30-35 mins (depends on over type)
- Leave to cool for 10-15 mins then cut up and take out, leaving it on a wire rack to cool.
I've made these many times in round tins too and made them into birthday cakes with a layer of cream, jam etc in the middle. You could add a couple of handfuls of dried fruit or chocolate buttons to make a variation.
They go down great in packed lunches and it's so quick to make you can cook it whilst your dinner's cooking and have some with custard for pudding :)
